Roasts...Perfect for Cooler Weather!

With the onset of some cooler weather...a slow-cooked roast comes to mind...the aroma fills the house and tantalizes the tastebuds!

A long time favorite:

Spicy Beef RoastPaula George

3 lb. round tip roast1 Tbsp. cracked black pepper
3 cloves garlic minced
3 Tbsp. balsamic vinegar
1/4 cup soy sauce
2 Tbsp. worcestershire sauce
2 tsp. dry mustard
Optional add ins: 1 large onion cut in strips
8 oz. sliced mushrooms
1 lg. bell pepper, cut in strips

Rub the cracked pepper and garlic into the roast. Place the roast in a crock pot, make several small slits in top of the roast. Whisk together remaining ingredients and pour over roast. Cover and cook on low 8-10 hours or high 4-5 hours.

Italian Beef Sandwiches

1 (3 to 4 1/2 lbs) beef roast, trimmed
1 can (12 ounces) beer (you choose the flavor), or use 1 1/2 cups beef broth
1 envelope dry Italian salad dressing mix
1 12-oz. jar sliced Pepperoncini peppers, with the liquid
Hard Rolls, Ciabatta Rolls, French Bread, etc.
Preparation:
Pour beer into crock pot. Drain liquid from pepperoncini into crockpot. Stir in the salad dressing mix until well-blended. Place about half of the peppers in the crockpot. Trim fat from the roast; place in crock pot on top of peppers. Top roast with remaining peppers. Cook Italian beef on low 8 to 10 hours Remove cooked roast from crockpot; cool slightly. While still warm, pull roast with two forks to shred. Toast split rolls, add 2 slices Provolone cheese. Spread with Dijon or Spicy Mustard. To serve, ladle small amount of warm liquid from crock over split roll or bread, top with shredded beef, then follow with more beef liquid as desired. Serve with additional peppers on the side.
Serves 12 to 16
Serve with forks and a stack of napkins.

Note: I serve the broth on the side as an au jus for dipping!
 


Wine-Roasted Pork Loin

3 lb. boneless pork loin
2 Tbsp. Montreal Steak seasoning
2 Tbsp. olive oil
1 large red onion, cut in slices
1-1/2 cups Burgundy wine

Rub steak seasoning on all sides of pork roast. Heat olive oil in large Dutch
oven over medium-high heat. Add roast and brown on all sides. Remove roast and
set aside. Add onions and saute for 5 minutes. Return roast to pan. Pour wine
over.
Cover and bake in 350 pre-heated oven for 1-1/2 to 2 hours or until roast is
tender. Remove cover last 20 minutes of baking.

I have made this for years and it is delicious...a side of Caramelized Sweet Potatoes & Onions, Green Beans...make for a delicious meal.

Holy moly, Nana. Just awesome! I made some small alterations, but wow! I used a 2 pound pork loin. After browning the roast, I deglased the dutch oven with a half cup of Beaujolais, then threw in the onion. When I put the roast back in, I used 2.5 cups of Beaujolais. When it was done cooking, I put a half stick of butter in the juice and let simmer while the roast rested, and then spooned the onion/wine sauce on top of the cut meat on the plates. OMG, it was awesome. We had Baked sweet potato and steamed green beans as sides. The sweet potato and beans married perfectly with the meat.

Slow Cooker Chicken Fajitas...and more...

serve with Pepper Salad, Spanish Rice for a complete meal!


Slow Cooker Chicken Fajitas

Makes: 6 servings; Total time: 20 minutes prep + 6–7 hours cooking (low)
BROWN:
11⁄2 lb. boneless, skinless chicken breasts, seasoned with salt and black pepper
2 Tbsp. olive oil

...


ADD:
1 large white onion, chopped
2 Tbsp. chopped garlic
1 tsp. dried oregano
1 tsp. chili powder
1 tsp. ground cumin
1⁄2 tsp. ground coriander
1⁄2 tsp. kosher salt
1⁄2 tsp. cayenne pepper
STIR IN:
1 can diced tomatoes in juice (14.5 oz.)
1 Tbsp. fresh lime juice
Salt to taste
SERVE:
12 fajita-size flour tortillas, warmed (6-inch)
Purchased guacamole
Sour cream
Brown chicken in oil in a sauté pan over medium-high heat, 2–3 minutes per side. Remove chicken to a plate.

Add onion, garlic, oregano, chili powder, cumin, coriander, salt, and cayenne to the pan; cook 2–3 minutes.

Stir in tomatoes, scraping up browned bits from chicken; bring mixture to a boil. Transfer tomato mixture to a 4–6-qt. slow cooker. Add reserved chicken and drippings. Cover slow cooker and cook 3–4 hours on high setting, or 6–7 hours on low setting. Remove chicken to a plate; let rest 5 minutes. Shred chicken into strips.

Purée tomato mixture in slow cooker with a handheld blender; stir in lime juice and season with salt. Reserve 1 cup sauce, then toss chicken with remaining sauce.

Serve chicken in tortillas with Pepper Salad, guacamole, sour cream, shredded cheese and reserved sauce.

Pepper Salad
This salad not only looks pretty but it's also full of carotenoids, which boost immunity and help fight against cancer and heart disease.

Makes: 6 servings; Total time: 10 minutes
2 each red and yellow bell peppers, thinly sliced
2 jalapeños, seeded and thinly sliced
1 cup thinly sliced red onion
1⁄4 cup chopped fresh cilantro
2 Tbsp. fresh lime juice
1 Tbsp. olive oil
Salt to taste
Combine bell peppers, jalapeños, red onion, and cilantro in a bowl. Whisk together lime juice and oil; toss with pepper mixture. Season salad with salt.

Nana's Spanish Rice

1 pkg. Zatarain's yellow rice
2 cups chicken broth
1 can diced tomatoes
1 packet Sazon seasoning
1 tsp. Goya Adobe seasoning
1 tsp. fresh ground pepper
1/2 - 1 tsp. crushed red pepper
1 red onion, coarse chopped
1 can (4 oz.) whole green chiles, coarse chopped

Bring chicken broth & tomatoes to boil. Add seasonings and peppers. Add yellow rice packet and red onion, stir and reduce heat to low. Cover and cook 15 minutes. Add green chiles and cook 5 minutes more.

Jerk Chicken!!!


Easy jerk chicken...although I normally grill this, due to weather last week, I baked it in the oven...delish!
Jerk Chicken
Thighs, Drumsticks, Breasts
1 bottle Lawry's Caribbean Jerk Marinade
1 package of McCormick's Jerk Steak seasoning Recipe Inspirations
 (oregano, cumin, garlic, onion, crushed red pepper,etc.) with 1 tsp. sea salt added
Place chicken pieces in large resealable bowl, pour marinade over. Cover and marinade overnight. Preheat oven to 375 degrees. Place chicken pieces in foil lined baking sheet. season with 1/2 of the Jerk seasoning mixture. Bake for 1 hour, turn chicken, pour remaining marinade over and season with remaining jerk seasoning. cook for 30 additional minutes.

Beef Tips & Rice





Hadn't made these in a long time and decided last week, they would make for a tasty dinner...SO good!

Beef Tips & Rice
1-1/2 lb. Sirloin tips
3 Tbsp. olive oil
1/3 cup flour
1 tsp. kosher salt
1 tsp. black pepper
...
1 pkg. McKenzie's seasoning blend (Mixture of onions, celery and red peppers) (sold in frozen section)
1 tsp. minced garlic
1/2 cup red wine
2 cups beef broth/stock ( I use Kitchen Basics)

Heat oil in large skillet...combine flour, salt and pepper;coat sirloin tips. Add to hot oil and sear in skillet. Add seasoning blend & garlic, saute 5 minutes longer. Transfer to small crockpot. Deglaze pan with red wine and add to crockpot. Add beef broth and cook on low for 6 or 7 hours. Serve over white long grain rice.

My Meat Sauces for Spaghetti or Lasagna

YEARS ago...and I do mean years ago, I began using this recipe for my friends and family. Jeremy's birthday dinner requested Lasagna and Jill's birthday dinner requested "Basketti".

My sauce:
1-1/2 lbs. ground chuck
1 lb. hot bulk sausage
1 cup chopped onion
1 cup chopped green bell pepper
3-4 cloves garlic, minced

1 heaping teaspoon each of:
salt
fresh ground pepper
oregano leaves
sweet basil leaves
parsley flakes
dark brown sugar

2 (6 oz.) cans tomato paste
3 cups water
Brown meats and drain, add onions, peppers and garlic. Saute for 5 minutes. Add remaining ingredients and bring to boil. Reduce to simmer and cook 30-40 minutes.

I use the same sauce for Spaghetti or Lasagna

Lasagna

1 box lasagna noodles (cooked or uncooked)
1 recipe of sauce1 package sliced provolone
1 large container Ricotta cheese
1 large package shredded Mozzarella
1 to 1-1/2 cups shredded Parmesan

layer:
saucenoodles
Provolone
Ricotta
Mozzarella
Repeat 2-3 additional layers in 13x9 pan; ending with sauce layer. Sprinkle with Parmesan Cheese. Cover with Plastic film and foil. Bake at 350 for 45 minutes (30 minutes if lasagna noodles are precooked). Uncover and bake 10-15 minutes. Let stand for 10 minutes before serving.

A more recent sauce that I have been making:

2-1/4 lbs. ground chuck, browned & drained
1 red onion, chopped
1 bell pepper, chopped
1 Tbsp. minced garlic
1/2 cup Pinot Noir
2 Tbsp. tomato paste
1 large can San Marzano tomatoes (hand crushed)
1 Tbsp. Perfect Pinch Italian seasoning
1 tsp crushed red pepper
1 tsp. salt
1 tsp. black pepper
1 Tbsp. brown sugar
1/4 cup basil pesto

Saute meat, onion, pepper & garlic. Deglaze with wine. Add remaining ingredients. Simmer 20-30 minutes. Serve over your favorite pasta. Garnish with Parmesan, Parmigiano Reggiano, Pecorino or your favorite cheese.

RECIPES:
 
24 Hour Wine and Cheese Omelet
(Doubled)
 
1 large loaf day old French Bread broken into small pieces
 
¾ lb. Swiss cheese, shredded
½ lb. Monterey Jack cheese, shredded
18 thin slices Genoa Salami, chopped
 
3¼ C milk
½ C dry white wine
1 cup unsalted butter, melted
6 large green onions, minced
1 Tbsp Dijon mustard
1/2 tsp white pepper
¼ tsp red pepper
24 eggs
 
2 C sour cream
2 C fresh grated Parmesan or
Asiago, shredded
 
Butter 2 shallow 3 quart (9X13 inch) baking dishes
Spread bread over bottom and drizzle with butter
Sprinkle with Swiss and Jack cheeses and salami.
Beat together: eggs, milk, wine, green onions, mustard, pepper and red pepper until foamy
Pour over cheese
Cover dishes with foil. refrigerate overnight or up to 24 hours
 
Remove from refrigerator about 30 minutes before baking
Preheat oven to 325°
Bake casseroles, covered, until set, about 1 hour
Uncover; spread with sour cream and sprinkle with Parmesan or Asiago cheese
Bake uncovered, until crusty and lightly browned - about 10 minutes
or place under broiler for about 3-5 minutes

Monte Cristo Bread Pudding
 

1/4 stick unsalted butter
12 oz. fresh mushrooms sliced
18 - 20 slices of sourdough bread, crusts trimmed
10 oz. Black Forest ham, cut into 1/2 -inch pieces
10 large eggs
3 cups (packed) grated Monterey jack cheese or Swiss , divided (12 oz)
 
3-1/2 cups of whole milk (do not use low-fat or non-fat)
2 T. chopped fresh thyme (or 2 t. dried thyme)
2 t. dry mustard
3/4 t. salt
1/2 t. pepper
 

Melt butter in heavy med. skillet over med-high heat. Add mushrooms and saute until golden, about 10 min., season with salt and pepper.
 

Generously butter 13x9x2-inch glass baking dish. Line bottom with half of the bread slices, cutting to fit. Top with ham, then 2 cups cheese (reserving 1 cup of cheese for morning). Top with mushrooms. Add enough remaining bread in single layer to cover. Whisk eggs, milk, 1 T. thyme, dry mustard, salt and pepper in large bowl to blend. Pour over bread. Cover and refrigerate overnight.
 

Preheat oven to 350 F. Uncover dish and bake until puffed and golden, about one hour.
Mix remaining 1 cup cheese and 1 T. thyme, sprinkle over. Bake until cheese melts, about 3 minutes. Let sit 10 minutes before serving.

Hilton Hotel Creme Brulee Cheesecake
 
48 ounces cream cheese, softened
1 1/2 cups granulated sugar
6 tablespoons sour cream
6 eggs
3/4 cup heavy cream
3 cups vanilla wafer crumbs
3/4 cup (1 1/2 sticks) unsalted butter, melted
6 tablespoons brown sugar
4 teaspoons orange peel
3/4 cup granulated sugar (for topping)
Boiling water (for baking)
Strawberries, raspberries and blueberries (for garnish)
 
Heat oven to 325 degrees F.
 
In a bowl place the cream cheese, 1/2 cups of sugar and sour cream
and beat on medium speed until mixture is smooth. Add the eggs,
heavy cream and orange peel. Beat until all the mixture is smooth.
 
In another bowl, mix until well blended the vanilla wafer crumbs,
butter and brown sugar. With fingers pat the wafer mixture into a
springform pan; top the wafer mixture with the cheese mixture.
Place pan into a larger pan and add boiling water to cover halfway
up sides of springform pan. Bake for 40 minutes or until set.
 
Remove very carefully the springform pan from water and let cool
for 30 minutes at room temperature.
 
Refrigerate for 4 hours or until serving time.
 
Slowly unmold the cake from the pan, sprinkle with the remaining
sugar and broil under broiler until sugar melts and browns (be
careful not to burn the sugar).
 
To serve, place cheesecake on a serving platter and surround with
fresh strawberries, raspberries and blueberries.

MICROWAVE BAKED APPLES
8  apples, I prefer Granny Smith
1/2 c. packed brown sugar
4 tbsp. raisins
4 Tbsp.chopped nuts
1/2tsp. cinnamon
4 tbsp. butter, cut into 8chunks
 
Core apples and peel skin from top.
In small dish, combine brown sugar, raisins, and cinnamon. Stuff apples with equal amount of mixture. Dot top of each apple with 1 chunk of butter.
Arrange apples in 9 inch square baking dish. Cover with plastic wrap.
Microwave on HIGH for 7 to 9 minutes. Let stand for 5 minutes.
Just before serving, spoon juices from bottom of baking dish over apples.

Honey & Oat Scones
 
3 1/2 cups flour
1 cup whole wheat flour
1 cup quick cooking oats
2 tablespoons baking powder
2 tablespoons sugar
2 teaspoons salt
2 cups butter
Cut the butter into the dry ingredients
 
1/2 cup yogurt
1/2 cup honey
4 eggs
Combine & add to 1st mixture
 
Cut dough & place on parchment lined cookie sheets
Brush with an egg/water mixture
Bake at 400° oven for 20-25 minutes.

RECIPES:
Jalapeno Popper Spread
2 (8 ounce) packages cream cheese, softened
1 cup mayonnaise
1 (4 ounce) can chopped green chilies, drained
2 ounces canned diced jalapeno peppers, drained
1 cup grated Parmesan cheese
Stir together cream cheese and mayonnaise in a large bowl until smooth. Stir in green chiles and jalapeno peppers. Pour mixture into a microwave safe serving dish, and sprinkle with Parmesan cheese.
Microwave on High until hot, about 3 minutes.
Baked Variation:
If you would like to brown the cheese, bake at 375 degrees F (190 degrees C) for about 30 minutes.
Serve with sliced sourdough baguettes, tortilla chips or crackers.

Tomato Caramelised Onion Tart(s)
This recipe originally came from Sara Moulton's show, Cooking Live. I have made this recipe many times over the years and it is always a hit. It can be served at brunch, as an appetizer, as a side, or for a vegetarian main dish. I also like that it is great either warm or at room temperature. Makes it easy if you need to take food somewhere (potluck, funeral, etc.). During the summer when I have fresh heirloom tomatoes, I like to alternate colours of the tomato slices. They look beautiful that way. You can make one large tart or individual tarts. It's really versatile. Most often I make it in my rectangular tart pan. ~ Becky
Sara Moulton's Tomato Caramelized onion Tart
Tart Dough:
2 sticks butter, very cold, cut into small pieces
1 2/3 cups unbleached flour
1/3 cup whole wheat flour
1 tsp salt
1 Tbsp sugar
1/4 cup ice water, or as needed
Caramelised onion:
1 medium onion, thinly sliced
1 Tbsp olive oil
Melted butter
Finely ground cornmeal
8 medium-sized round tomatoes
2 Tbsp Dijon mustard
1 cup shredded cheddar
Salt and freshly ground black pepper
2 Tbsp olive oil
1 large egg white, for egg wash
Basil, sliced thinly, plus extra for garnish


Make tart dough: Put in the work bowl of a food processor, the flour, butter, salt and sugar. Pulse quickly until the butter is the size of peas. Add very cold, ice water in a small stream until the dough just comes together. Empty the work bowl out onto waxed paper and shape into a ball. Wrap in plastic wrap and place in refrigerator until ready for use.
Make caramelised onion: In a skillet heat the olive oil until hot and cook the onions, stirring constantly, until golden. Remove from heat and let cool, set aside.
To assemble tarts: The tart can be made in 8 individual pie pans, two smaller tart pans, or one large tart pan. The pan(s) should be brushed with melted butter and liberally sprinkled with corn meal.
Divide dough into equal pieces if using more than one pan. Keep unused dough in the refrigerator (must be kept cold). Roll out the dough into shape suitable for pan. This is a rustic-style tart, so the edges don't have to be perfect. Make the dough large enough so the edges of the dough will fold over the top of the tart an inch or so. Crust will be thick; you don't want it too thin or the tomatoes will bleed through bottom. Place crust in tin. Repeat until all are done and place tins on baking sheets.
Preheat oven on to 375°F. Brush bottoms of dough shell with mustard. In the following order place into shell: cheddar cheese, caramelised onion, sliced tomato, salt and pepper, basil, and olive oil. If using more than one tin, divide ingredients equally between them. Fold in the tops of extra dough around the tomatoes and brush dough with egg whites. Bake for 30 to 45 minutes. Right before serving, garnish with more slivered basil if desired. Serve warm or at room temperature.
NOTES:
1. This same dough is also suitable for fruit tarts. I've made used it with plums, blueberries and peaches.
2. Dough can be placed in tins ahead of time and frozen.

Ya'll Comeback Pasta Salad
2 cups mayonnaise
1 cup Chili Sauce
1 tablespoon Worcestershire sauce
2 cloves garlic -- minced
1 teaspoon fresh ground black pepper
1 small onion -- grated
salt -- to taste
1 tablespoon Smoked Paprika
few dashes Tabasco sauce
1 teaspoon dry mustard
1/4 cup vegetable oil
Combine all ingredients , blend with immersion blender and refrigerate.
2 lbs. tri color rotino pasta cooked and drained
6 green onions, diced (white & green part)
1 cup diced celery
6 hard boiled eggs, chopped
Stir sauce into pasta and veggies. Refrigerate 1 hour before serving.

Yummy Fruit Dip
Combine:
2 Tbsp. flour
1 Tbsp. butter
1 cup pineapple juice
1/2 cup sugar
1 egg
Whisk together and cook over med-low heat until thickened. Set aside to cool. After cooling, stir in:
1 cup whipped topping
Serve with fresh fruits of choice for dipping.

STRAWBERRY PECAN CAKE
1 box white cake mix
1 small box strawberry gelatin
1 cup vegetable oil
1/2 cup milk
4 eggs
1 cup frozen strawberries, chopped
1 cup coconut
1 cup chopped pecans
Mix cake mix and jello; add oil, milk, and eggs. Beat until smooth. Fold in
remaining ingredients. Grease and flour 3 (9 in) cake pans. Bake at 350 for
20-25 minutes. Cool on wire rack.
Icing:
1 stick butter
1 lb. confectioner's sugar
1/2 cup drained strawberries
1/2 cup pecans
1/2 cup coconut
Cream butter and sugar; add other ingredients. Frost between layers, sides and
top. Can be garnished with additional coconut and pecans.

Ingredients
1/2 packet (1 teaspoon) unflavored gelatin powder
1 1/2 tablespoons cold water
1 1/2 cups heavy cream, divided
1 cup plain whole-milk yogurt
1 teaspoon pure vanilla extract
1/2 vanilla bean, split and seeds scraped
1/3 cup sugar, plus 1 tablespoon
2 pints (4 cups) sliced fresh strawberries
2 1/2 tablespoons balsamic vinegar
1 tablespoon sugar
1/4 teaspoon freshly ground black pepper
Freshly grated lemon zest, for serving
Directions
In a small bowl, sprinkle the gelatin on 1 1/2 tablespoons of cold water. Stir and set aside for 10 minutes to allow the gelatin to dissolve.
Meanwhile, in a medium bowl, whisk together 3/4 cup of the cream, the yogurt, vanilla extract, and vanilla bean seeds. Heat the remaining 3/4 cup of cream and the 1/3 cup of sugar in a small saucepan and bring to a simmer over medium heat. Off the heat, add the softened gelatin to the hot cream and stir to dissolve. Pour the hot cream-gelatin mixture into the cold cream-yogurt mixture and stir to combine. Pour into 4 (6 to 8-ounce) ramekins or custard cups and refrigerate uncovered until cold. When the panna cottas are thoroughly chilled, cover with plastic wrap and refrigerate overnight.
Combine the strawberries, balsamic vinegar, 1 tablespoon sugar, and pepper 30 minutes to 1 hour before serving. Set aside at room temperature.
To serve, run a small knife around each dessert in the ramkein and dip the bottom of each ramekin quickly in a bowl of hot tap water. Invert each ramekin onto a dessert plate and surround the panna cotta with strawberries. Dust lightly with freshly grated lemon zest and serve.
