Chorizo and Black Bean Enchiladas

Chorizo & Black Bean Enchiladas

4 links Chorizo Sausage, casings removed
1/4 cup chopped onion
1 can black beans, rinsed & drained
4 oz. can chopped green Chile’s
1-2 tsp. Southwest or Taco seasoning
6 oz. block Colby Jack cheese grated
2-3 scallions, chopped
6 flour or corn tortillas
1-1/2 cups medium salsa

Preheat oven to 375. Line a 11x7 dish with foil or spray with cooking spray.

In medium skillet, brown sausage, crumbling as it cooks. Add onion & cook 2-3 minutes. Add beans & green Chile’s & seasoning. Heat until bubbly & mash a few beans slightly against side of pan. Add 1/2 cup grated cheese to filling.
Fill center of tortillas, fold over both sides and place seam side down.
Bake, uncovered, for 20 minutes to crisp up tortillas.
Top with salsa, remaining cheese & sprinkle with scallions. Bake an additional 20 minutes.
